Our sourdough pizzas are an experience that combines ancient techniques with modern flavours. Sourdough in pizzas creates a crispy crust with a chewy, airy interior, resulting in a crust that's easy to digest and delicious.
Sourdough is a type of bread that uses natural fermentation instead of commercial yeast. This process starts with a sourdough starter—a mixture of flour and water that captures wild yeast and beneficial bacteria. Our mother starter - WeirDough, was first fed on 22nd July 2024.

We believe that the finest dishes start with the freshest ingredients, sourced locally whenever possible, and our menu reflects this commitment. Freshness extends beyond our ingredients to our cooking process, as our kitchen prepares meals daily rather than batch cooking or prepping days in advance.
While we take pride in our sourdough pizzas, our offerings extend beyond! Litmus Brasserie provides a relaxed yet vibrant dining experience, making it ideal for both everyday meals and social gatherings.

Hey there! I’m Shrey Suratwala, with my roots in Mumbai, Pune and Surat. I finished my hospitality and culinary education in Pune, during which I interned at a Brasserie after my college hours. Skipping forward a few months, an intense internship at a restaurant in Malaysia was in store for me. These internships were my passage to the real world and soon my everyday!
Fast forward to 2019 in Surat, where I landed the opportunity to start a pizzeria as a head of restaurants. Working there was like being on a crazy rollercoaster – thrilling, fun, and full of surprises. Over four years of opening multiple cuisine centric restaurants and creating other branches of the company, 2024 was the time to follow my calling/dreams. And you know what they say, when one chapter ends, another begins.
So, I decided to chase my dreams and open my own joint – Litmus Brasserie. This place isn’t just about serving food; it is about sharing my passion with the people of Surat, and later hoping to share with the world.
I am now living my dream — standing in my own kitchen, watching people savour every bite that I, along with my amazing team, brought to life.
