Meet WeirDough, our house sourdough starter that’s been alive and well since 22 July 2024. It’s a living, breathing mix of flour and water that captures wild yeast and friendly bacteria to create flavour you can’t fake.

 

Sourdough isn’t just a process, it’s patience. It’s fermentation, timing, and care that builds character into every crust. The result is a pizza that’s crisp on the outside, soft and chewy inside, with that light sour tang that keeps you coming back.

 

Around here, dough isn’t just dough—it’s a full-time relationship.

STORY

Litmus Brasserie is the dream of Shrey Suratwala, a chef who’s been chasing flavour across cities long before setting up his own kitchen in Surat. From his days in Mumbai and Pune to an intense internship in Malaysia, every experience added fuel to the fire that became Litmus.

 

After years of opening and running multiple restaurants, 2024 felt like the right time to do something personal—to bring together everything learned, everything loved, and everyone who loves food just as much.

 

Litmus is more than a restaurant. It’s a place built on the idea that hospitality is just treating strangers like friends who haven’t eaten yet. Every meal is a conversation, every table a story.

 

We’re here for the burnt edges, the laughter, the clinking of glasses, and the small moments between bites that make food feel like home.
